Made in Hanoi, Vietnam, from yellow sticky rice that is hulled, milled, and unpolished, the rice is left out to ferment, and when it becomes a liquid, another fermention begins. The latter fermentation takes place in a mix of amphora, terracotta, and oak, then made sparkling via the Traditional Method. It's medium in body with notes of bruised Granny Smith apples and chicken broth soup, with medium
